Mother's Day lunch

I am cooking lunch for my DMum on Mother's Day. First time we will have spent it together in a very long time.

She has requested Greek salad, salmon and lemon syllabub. But what with the salmon? She is a very traditional cook so would like to jazz it up a bit and not just do steamed veg.

And any great recipes for the salad and syllabub? Am on a very tight budget but prepared to spend a bit more to make it really nice for her.

I am a decent cook but have read hundreds of recipes and am not sure which ones are any good.

Do you plan on flavouring the salmon at all?

@AtleastitsnotMonday I could! I have only ever cooked quite simply and traditionally as my DMum taught me Smile

I used to do a recipe where you put the salmon in a freezer bag with orange and lemon juice but am very very open to ideas. Just not really spicy.

I make this Horseradish baked salmon regularly, it’s really simple but tastes delicious. Usually serve with mini herby roast potatoes, minted peas and tender stem broccoli.

Make a hollandaise sauce flavoured with lemon to go with the salmon. Use really fresh eggs and it will be really simple. Turns plain grilled salmon into a feast.

Thanks both! Definitely getting my mind going. I don't like hollandaise (am egg phobic) but could definitely make it for Mum.
