Broccoli stalks

Can anyone think of a (meat free) recipe to use broccoli stalks? I’m thinking perhaps fry with garlic and chilli but haven’t got any further than that.
(Trying to not throw away things that are edible.)

Soup is an obvious one. They are also delicious roasted with garlic, chilli flakes and sesame oil as a side

Agree with keeping them raw. I use them shredded in salads, especially nice with celery, water cress, finely sliced apple and blue cheese.

I grate them into salads, or stir fry them with mushrooms and soy sauce, or soften them with mixed veg and stock and mix with passata to make hidden veg sauce for my picky DS.

We use them with in pretty much the same way as broccoli. So anywhere you would use broccoli, put in some slices of stalk too.

I just give them as they are to my DC as a snack while I'm cooking, they think it's a great treat grin

I just cut them up and steam them with the rest of the broccoli. Or add them to soups (with the rest of the broccoli)

Same as kitten. Just chop them up and throw in pan with the florets. Or spiralise them and use as noodles or in a salad.

Don't you cook and serve them as part of the broccoli?
Why would you cut them off?

I cook them with the florets too (roasted broccoli is delicious by the way) or eat them raw whilst I'm cooking.

I prefer the stalks, boil or steam briefly, and smother with hollandaise sauce

I chuck them in eith the rest or freeze to add to soups.

I eat them as part of broccoli. I’d never just eat the tops.
If steaming then I maybe shave a little to make them slimmer. If stir frying I’ll slice them. Sometimes if partic woody I’ll start them steaming/frying first before adding slimmer tops.

I just cook and eat them as part of the meal!

Mind you they are bloody delicious raw, together with cabbage, cauliflower and any other stalks.

In our house, if they are removed, they are cooks perks. I love raw veg.

There's a river cottage Love Your Leftovers book which is excellent if you are trying to use up the trimmings of things. There is a yummy stem soup in it which uses up cauliflower leaves and broccoli stems.
I usually just include the broccoli stem in whatever I am doing with the rest though.

If I'm doing broccoli as a veg on it's own, I just leave them attached and cook them as usual. If it's a stir fry or similar that calls for broccoli florets, I slice the stems thinly and add them with the rest.
