Just that really, got loads to do today so want something that I can put in the oven and forget, any ideas for something a bit different. Usually would do a shoulder of lamb or brisket in various forms.

A tray bake?
Chicken, chorizo and Mediterranean veg
Cod wrapped in pancetta with cherry tomatoes and olives

Or pulled pork in the slow cooker or a gammon joint.

Came on to say tray bake but PPs got there before me
Also a pie, either mashed potato topped lid shepherds pie or fish pie, or a pot pie with pre roll pastry.
Toad in the hole or sausage and Yorkshire's with mash
All in one fish parcels

I do a cheats fish pie which is fish pie mix, and cheese sauce and mash ready made from the chilled section of the supermarket with whatever veg is to hand and some grated cheese on top. Always comes out lovely and really can't get much easier than that!

Can do a Dolmio lasagne too.

Porchetta….

You can skip the overnight marinade and it still tastes good.

Sausages and mash is my easy, but satisfying and hearty family meal. Served with loads of cabbage and pea and gravy. Yum.

I do something like this and serve with rice, gherkins, vinegar, horseradish sauce.

Lovely with turnips and potatoes, makes the stock sweet.

I use my slow cooker, but an oven on low would work.

Sausages in ale -

Lay leaves of Savoy cabbage and a heap of sausages in a baking tray, dot with chunks of butter and pour in a 50/50 mixture of ale and stock, covering the sausages halfway. Season with fresh herbs, bake until cooked, turning the sausages a few times, and serve with mash.

These all sound fab went for a joint of gammon, 30 mins in instant pot and 15 mins in oven with mustard and brown sugar, served with saute sliced new potatoes and onions. Having the rest tonight in a pea and ham risotto.
