Cabbage

I bought a cabbage for a recipe last week, but it only required a small amount. So I have a lot of cabbage left. Just about to meal plan for tomorrow's shop - any suggestions on what I can use the rest of the cabbage for? I don't actually like cabbage so it needs to be reasonably well masked...

It’s great in stir fry.

Cook it and add it to mash.

Fry some onions, bacon & garlic. Once softened add in the cabbage, cook for 8 to 10 mins to allow to soften Add in some chilli if you want a kit Either eat it as is or with grilled/baked chichen .

Jamie Oliver does a pasta dish pancetta, cabbage, mozzarella and pine nuts. My cabbage hating children have it down as one of their favourite pasta dishes.

Just last night I shredded a bit of leftover white cabbage. Microwaved for 1.5 minutes. Added chopped onion (a teaspoon) and a teaspoon of crunchy peanut butter and a squirt of fish sauce! Seriously it was lovely!

  • cabbage stir-fry with other veg. Could choose any sauce- satay, teriyaki, sesame etc
  • depending how it was cut, use the leaves for stuffed cabbage using mince and/or rice and veg inside

My fave cabbage dish is to dry roast some cumin seeds. Finely slice strips of fresh ginger and braise them slightly in sauté pan or wok.
If the Cabbqge is s bit old or tough I’d then slice and steam it (but only for a few mins)
Then put Cabb and cumin seed in with ginger and sauté (butter and oil) until cabbage is cooked to your preferred crunchy/softness.

If cabbage is fresh then no need to steam - can just slice thinly put in pan and put lid on to cook it with other ingredients.
Top with butter (I do anyway).
Bloody gorgeous.

Not all cabbages are equal !

Is it a soft cabbage such as Hispi?
Hard Dutch white cabbage?
Red cabbage?

Strong crinkly cabbage such as Savoy or January King?

All require different treatment to make them lovely - or not.

I have this problem this week. On my meal plan is:

  • Stir fry noodles with cabbage, carrots and mushrooms
  • Roast duck, potatoes, cabbage sautéed with onions and caraway
  • chilli con carne with rice and Coleslaw


(It’s a really big cabbage)

White cabbage is great sliced into "steaks" crush garlic, chilli flakes and mix with a bit of oil. Cover the cabbage with the garlic mix and roast for about half an hour in a medium oven. It's delicious and makes a nice side.
