Help me cook a joint if brisket.

I haven’t had one for ages and I just fancied it with some buttery mash. Ow would you cook it? We are eating this evening so have all day.

Brisket needs to cook long and slow. I’d brown the meat on all sides in a casserole, fry off chopped onion and celery, add bay leaf, seasoning, add plenty of stock, cover and bung in a medium oven for at least 4 hours.

You can also bung it in the slow cooker for next time.
