Seriously delicious 'healthy' cake / dessert

Made these recently and thought I'd share as they are slightly unusual but very nice and not at all bad in terms of fat and sugar.

'Fake' Victoria sponge cake:
Keep an open mind and try it Wink
Take 3 slices of white bread. Spread two pieces with a thin layer of Greek yoghurt, and a small dollop of strawberry or raspberry jam. Assemble the three layers. Cut crusts off and cut into triangles. Sprinkle a tiny bit of granulated sugar on top of each wedge.

Banana and raspberry 'pancake'. Mash one banana and combine with a large egg. Melt a small amount of butter in a frying pan and add the batter. Cook on both sides. When nearly done add fruit such as raspberries or blueberries and fold over. Sprinkle a small amount of sugar on to finish.

Both taste quite fattening but aren't at all. Grin

I can second the banana pancakes, they're lush.

We don't ever have white bread, but I wrinkled my nose at yoghurt+bread anyway so probably wouldn't try it.

You could have a small slice of actual Victoria sponge cake for the same calories as in your version...why not just have the real thing?

Because the bread version contains less fat and sugar.

If you are calorie counting then fair enough, but if you are keen for a low ish fat and sugar diet for other reasons then this version may be preferable.

The banana pancakes are good, I’ve tried them. I don’t think they need a sprinkle of sugar to finish, though.

Banana pancakes are good but I add a bit of baking powder to make them rise and feel lighter.

The first one? What on earth...

White bread has salt and sugar in. Why sprinkle white sugar on top? Jam is just mostly sugar.

Make carrot or courgette or beetroot cake if you want it a bit more healthy. Use wholemeal instead of white flour. Use honey or maple syrup or banana for sweetness, and cut down on refined sugar.

Banana pancakes are delicious 👍 I was gutted when my daughter started being able to finish off a whole batch 😂 I find a spoonful of flour makes them a bit easier to manage though.

Yes I know, it does seem an odd thing to make. But let's say you don't have the time to bake, you have a craving for a slab of cake, so you rustle up the white bread / Greek yog / jam combo in a matter of minutes, and guess what, it tastes remarkably like a Victoria sponge. And as for fat and sugar, yes of course bread contains those, but it's a question of proportions, and a small amount of jam and a tiny - I do mean tiny - sprinkle of sugar on top isn't going to hurt. The sugar on top just adds to the cake flavour.
