DP and I have lacked enough veggies recently so I want to make something delicious tonight! Hit me with your favourite veggie meals please

If you’re feeling low on vegetables you could use a mix of whatever you fancy instead of the tofu.

Bean chilli.

Stick peppers (( frozen )) and onions in a pan, fry off with garlic, paprika, chilli powder and cumin. Season.

Open whatever beans you want to use, I use 3 tins so there's leftovers but you could use 1 tin if you want.

Add lentils. If you want to.

Add a tin of tomatoes and a splash of water, squirt some tomato puree in then leave to simmer.

Serve with brown rice / cous cous /;baked potato or just in a bowl with crusty bread.

Top with sour cream / cheese/ guacamole/ nacho

Add a bit of water to any leftovers and blitz into soup for the next day.

Bask in how easy the world's nicest dinner is to make.

The beauty of bean chilli is anything goes, there isn't really a recipe and it's pretty much opening tins and throwing stuff in but is stupidly healthy

Veggie lasagne with onion, peppers, courgette, aubergine, tinned Tom's and lentils, served with a salad?

Whole meal wraps with stir fried pepper, onions and grilled halloumi served with corn on the cob, lettuce, mint yohurt dip, tomato salad?

Stiry fry with cashews, broccoli, green beans, sugar snap.

Stick aubergine, courgette, onion, peppers, garlic in roasting tray. Roast for 20. Add tinned tom, black sliced olives, capers, herbs. Roasted for 20. Serve on pasta.add cheese.

Lentil dhal or chickpea curry with added spinach. Serve with roasted turmeric cauliflower.

Paneer curry is amazing! Simply cook is really good for veggie dishes. I pay around £8 a month for 4 recipes with spices/pastes and have had some really nice ones. After a few tries you can usually learn to make them without paying for the spices!
