Pasty recipe

I'm thinking of having a crack at replicating an approximation of the magestic Philps Veggie Cornish pasty tonight but I've only ever made beef ones before.

I'm thinking white onion, carrot, Swede, potato. Would celeriac work? Maybe go off piste and add fennel! Any ideas cooks?
