Fresh Ginger

I got some the other day and got far too much.

Can I freeze it as it is, or, should I grate it first, and how do i use it when frozen, can i grate it from frozen etc.

I would peel it first but leave it whole. Mind you mine keeps for donkey's in the fridge

Ainsley says to freeze it as is and then grate from frozen. I have got round to freezing it but have yet to use any so don't know if he is right!

Probably should have peeled it cos that makes sense. Was wondering about the skin!

I freeze it, then grate from frozen, skin and all.
