Ideas for a make ahead starter please

I would be grateful for any ideas for a make ahead starter that can be transported easily and has a bit of wow factor.

I am a relatively good cook so don't mind a bit of effort but I seem to be lacking imagination on this!

Dietary requirements mean no seafood but other than that there are no restrictions.

Soup? My friend did a vegan butternut squash soup which was delicious.

I made this vegan (one of my friends is vegan - we have vegan nights 😉) tart. Thin layer of mustard on the puff pastry, worked a treat.
