(1 Post)Some of my vegetable soups are less pleasant than I hoped for, but I did make a delicious one today, if anyone is interested. It contained:
1 tbsp oil
A large onion
4 cloves garlic
Half a celery
3 large carrots
A Tin of cheap cannellini beans
100g (raw) lentils
60g sundried tomatoes (I wanted to use them up)
A vegetable stock pot
A kettle full of water
Unusually there were no herbs.
I fried off the onion, then garlic and veg, and chucked in the rest for about 45 minutes, with the water.
It contains 5 large portions of 222 calories.
