What's the veggie equivalent of a Sunday roast?

DS1 is now strictly veggie. That's fine. We eat veggie food often anyway. But I miss a Sunday roast which fills the house with a welcoming smell, is easy to cook, has lots of left overs that people can make into their own lunches and dinner next day .

There must be a cosy, family veggie dish that is versatile in this way. What is it?

Well we often have a Sunday roast without the meat but with curries. So we roast potatoes and any other veg we like and cook 3 different curries to go with it.

So maybe a lovely dhal with spinach and sweet potatoes and lentils, plus a creamy one with coconut and something else...a tomatoey one.

It takes ages like a roast does...we like it anyway!

I'd keep the roast meal & do something just for him - veggie burger or similar maybe? He can still have any veg that aren't cooked in animal products.

My vegetarians like veggie haggis. Or just do the usual with a couple of veggie sausages.

I make nut roasts but only occasionally as they are a bit of a faff.

There are lots of alternatives that will accompany the usual roast dinner such as nut roast, mushroom wellington and red onion tart. BBC good food website is a good place for ideas!

Do the whole lot but replace with something like the Linda McCartney beefless roast with red onion glaze, comes frozen in its own tray to cook.

Use veggie sausages to make toad in the hole or if not keen on meat substitutes use red onions and butternut squash in the batter instead. Otherwise just do your normal roast but go to town a bit with the sides, a couple of different stuffings and cauliflower cheese all make a more substantial meal.

You could do a Middle Eastern style mezze type meal with lots of different bits to have leftovers from - with some lovely zataar roasties on the side or a pilaf with onions and pomegranate seeds.

Lots of meat replacements would work (Quorn Roasts, Linda McCartney's Beef Roast, Quorn Gammon, even sausages etc).

Then you've got the veggie based stuff like nut roasts, nut wellingtons etc. Lidl did an absolutely beautiful nut roast over xmas. Accompany this with lots of steamed / roasted veg, yorkshires, stuffing, sauces etc. Beautiful!

I usually have the Quorn chicken style roast with roast dinners, but a proper roast with Yorkshire’s and stuffing balls (Paxo is vegan) and all the veg and potatoes doesn’t actually need a ‘main bit’ to be a proper dinner

Roasted peppers stuffed with sage and onion stuffing, thickened with an egg, with some shredded spinach and pine nuts stirred through, tastes amazing and is as hard to make as stuffing balls

Obviously I meant paxo stuffing not sausage meat! Stuffed peppers are great with bbq jackfruit and cheese or bean/quorn chilli too

My veggie wellington includes lentils, butternut squash, carrot, mushroom, chilli, rosemary, thyme, garlic and puff pastry. I make individual ones for each person and non veggies can have them alongside their meat. They are amazing with gravy and roasted veg!

DS2 is veggie but loves his Sunday dinner. I do vegetarian gravy for him along with a nut cutlet or veg sausages and everything else is the same. Im careful to use separate spoons / knives for meat. There is a quorn "family roast" which looks revolting but actually smells and tastes fine. There's too much for one person but sliced up leftovers are good in sandwiches or re-heated with some honey and soy sauce.

DH and DD1 are both vegetarian. Good veggie dishes to go with a roast that we have are:
Butter bean, leek and mushroom bake.
Spinach and feta puff pastry pie
Aubergine, courgette, beef tomato and mozzarella stacks.
Nut roast.
Also, Asda do tins of giant beans in a slightly smoky sauce. They are in the Greek/Mediterranean section and delicious. A quick meal is sautéing some veg then adding a tin of these beans to them.

Cauliflower cheese grills or cheese and onion crispbakes (both in freezer section) are great with a roast. We normally do a quorn roast, veggie toad in the hole or a veg puff pastry tart. The sides are the best bit anyway!

Also, just thought if you were thinking about a large main for all of you to eat the same thing we have made a vegetable crumble before that works well. Think it was a BBC recipe

Dd is veggie and just has the dinner without the meat. I always do roast carrots and parsnips and then 3 other veg, and a cauliflower cheese is always welcome.

You could do a big veggie chilli and then serve it with little bowls of rice, salad, cheese, sour cream, nachos and wraps.

Or as pp said a veggie curry. Or even something like thai food. Or budda bowls work well for having bits left over.

On Christmas day my bro in law cooked us a great veggie main, it was mixed veg, diced and spiced, fried then wrapped and in pastry and baked. Bit like a strudel he said, although I said pasty! It was a hairy bikers recipe. I'll be looking that one up!

Our veggies eat anything from Quorn roasts (normal, beef or gammon), nut roasts, root vegetable roasts, or mushroom Wellingtons, various pies or sometimes just a big wodge of Paxo stuffing.

Bisto Red ‘Beef’ gravy is vegetarian, so I make a big batch (not so much a gravy boat as a gravy Dreadnought) of that too.

You don’t get that meaty-bit-fatty-unctuous gravy you have when making it with meat roasts, but hey ho.

I'm a veggie and don't particularly like butternut squash or mushrooms. or goat's cheese or risotto.
Not bothered about pastry but it isn't a meat substitute.

A meat substitute or nut roast is great with a roast dinner. Don't add a curry or something as the flavours don't go together well.

Lentils (I like the green ones) are great as an ingredient.
