Recipe suggestions needed to clear fridge please

I cancelled some items on my food delivery, but still received some. Glitch on the app I suspect.

So I have the following to use up.

  • 2 enormous bags baby spinach
  • 3 courgettes
  • broccoli and cauliflower
  • red pepper


  • Quorn mince, pieces and nuggets
  • paneer, ricotta, cheddar, eggs
  • chicken
  • some sort of pork thing


  • wraps
  • rice
  • pasta
  • noodles
  • usual store cupboard stuff - tomatoes, beans, lentils etc


Would anyone like to put that together as a plan. I had an idea of what I was going to do, but need to rethink. Also received 4 pizzas Hmm vegetarian, but dh eats meat at the weekend.

Sag paneer curry would be a great way to use up the spinach.

Those pizzas could have meat added if it’s totally unacceptable for them to be vegetarian on a weekend.

Easy one would be a pasta bolognese pasta bake with the pasta & cheese and I'd stick peppers and courgette in with it.

Pork stir fry with the rest of the peppers, courgettes and spinach.

Stir fry chicken using a couple of eggs, spinach, broccoli and cauliflower into small bits.

Cheese & spinach omelette.

@PurpleDaisies he is usually a raging carnivore, but has given up meat during the week having watched some programme on Netflix. He seems to be enjoying it, although as I do all the cooking he already eats far more meat / egg / dairy free meals than he probably realises.

Sag paneer is a good idea

Quesadillas with the wraps
Stir-fried rice, add the chicken last to DH’s serving

I realise that wasn't clear. We all are vegetarian, however dh eats meat at the weekend. There should have been a full stop after the random pizzas.

Okay, the pork is some kind of joint that is heated and then pulled apart, with apple sauce. Could that go in wraps? Or maybe mashed potatoes?

Also have a red cabbage, some parsnips and carrots.

How many are you?
sag paneer, gobi bhaji, some quorn curry. Serve with rice.

Use peppers and courgettes with tomatoes and spices for quesadillas: cheddar to help them stick.

H can have pulled pork with mash and spiced red cabbage.
The rest of you have mash and cabbage with quorn pieces made into a stew.

Make the mince into a bologneseish thing and add extra veg. serve with pasta.

leftover veg and spuds can go into a big traybake: do a cubed chicken breast for H. The rest of you can have the nuggets.

broccoli and cheese frittata/Spanish tortilla. If you have spinach left that can go in too.

My favourite is lentil & bottom-of-the-fridge veg curry.
I make large batches & freeze in portions.

Baked eggs Florentine is always a hit in our house. Wilt spinach, squeeze out water, lay in lasagne type dish, season, create depressions with back of spoon and break eggswhole into each one. Cover with grated cheese/cheese sauce/any creamy cheesy mixture which could be with your ricotta. Bake until eggs are set to your preference. Great with nice bread
