Give me your easy fish recipes!

I have always struggled with fish based meals because my mum never did fish when I was a child. I never know how to cook it or what I should pair it with.

I want to include more fish in our diets, but I've just had twins so recipes need to be quick to throw together, and fairly mess-free please! My other children are very good eaters and will eat almost everything, except potatoes Hmm

Marinate cod fillets in a mix of yoghurt and curry paste. Remove from marinade place fillets on baking tray and put in oven for 20 mins. Then remove from oven, spread tops of fillets with mango chutney and grill til golden.

If they don’t eat potatoes, does that mean no fish cakes or fish pie?
Tuna burgers are basically fish cakes without the potato and this recipe is so quick and easy www.bbcgoodfood.com/recipes/5863/tuna-sweetcorn-burgers I used it for BLW too.

Cod with tomatoes
chuck cod olive oil, garlic and whole cherry tomatoes in an oven dish and bake for as long as the cod needs. In our house then mash the tomatoes and garlic together to make a sauce when it's all cooked.

Sweet chilli salmon
Salmon drizzled with sweet chilli sauce, in the oven until cooked, serve with green veg and rice/ noodles

Prawn Linguine
oil, cherry tomatoes and garlic and a few chilli flakes in a dish in the oven. Roast until you can mush them into a sauce. Add king prawns and cook in the sauce until pink. Serve with linguine/ spaghetti

Fishfingers - take out of freezer and cook on metal tray Grin

Start off simple.

Pat fish dry, lightly coat in seasoned flour, then either pan fry in shallow oil or wrap in foil and bake.

Cod wrapped in pancetta is also delicious, I spread a little red pesto on top of the fish, wrap with the pancetta and bake.

Ooo some of these sound great! I will start adding them to the meal plan.

I admit, I have been doing fish pie, but that's about it for fish up until now. The kids just avoid the mash on the top.

Cod chorizo and butter bean stew - fry onion and chorizo, add butter beans and tin of tomatoes. Put in over dish and lay piece of cod on top - bake in over for about 20 mins. Can scale up / down depending on how many to feed. Recipe on bbc good food

Salmon or basa fillets cooked in foil in the oven variety of flavours, serve with salad / rice / veg / sweet potato wedges / noodles:

  • butter and dill
  • lemon and black pepper
  • lime, red chilli, soy sauce, honey
  • yogurt and curry paste
  • sweet chilli sauce
  • harissa paste
  • pesto


Cod wrapped in Parma ham with sweet potato wedges, long stemmed broccoli and asparagus

Tuna and cheese on baked potato (personal favourite!)

There’s a microwave risotto recipe on bbc good food for prawn, courgette and pea risotto which is also very nice (and very easy!)

Fish chowder made with white fish such as cod or haddock or smoked haddock, sweet corn, peas, broad beans if liked. The basic recipe includes diced potatoes, but as your children don’t eat them you could substitute soup pasta or rice. All made in one pan, so not much washing up!

Rinse some basmati rice.
Put in pan with cold water - start cooking on hob
Any white fish you like - put in foil wth a bit of butter/foil/milk. Bake for about 15 - 20 minutes dep on thickness of fish
Bring rice to the boil, taste until soft (longer boil for sticky rice)
Chuck in some frozen peas when rice is nearly done
Stir in the cooked fish
Obviously you can add broccoli or anything you think will not overwhelm the (delicate) flavour of the fish and will add colour, etc
I sometimes sprinkle a bit of sweet chilli sauce on my own portion (NOT the whole thing)
Only one pan needed. Maybe a cooking tray but foil should catch most of the mess/juices
The whole thing is 25 minutes tops.
You can veg or salad on the side obviously if that doesn’t seem enough

Frozen spinach
Cod fillets (can use frozen bricky o es)
Cheese sauce

Defrost 12oz frozen spinach and drain well - season with salt and pepper
Pop cod steaks on top (defrosted if frozen)
Pour 3/4 pint cheese sauce over - add handful of grated cheese
Bake for 30 mins until cheese is golden
Serve with peas - wd have it with croquet potatoes

Cheese sauce
1.5oz butter
Generous tbs flour
4 oz strong cheddar
1/2 tsp dry mustard
Pepper

Melt butter and add flour, stirring vigorously, cook gently for 1 minute. Add milk slowly stirring constantly, add dry mustard whilst stirrring (shoukd cover back of a spoon like custard), add cheese, twist of pepper.

Thai red (or green) curry paste with onion, one or two veg and a can of coconut milk. Add cod or whatever fish for the last few minutes. Cook until done. Serve with noodles. I use mange tout and sugar snap peas, or peppers. Very popular with kids.

Bake cod until almost done
Top with mild salsa & cheese
Back in the oven until the cheese is melted.

This is my Dead Easy Salmon Pasta.
Boil pasta, add peas, cooked mushrooms, smoked salmon trimmings and cream. Heat through for a minute or so.

Sea bass fillets, chopped ginger, lemongrass, chopped chillies, peppers, coriander, lime juice, soy sauce, in a foil parcel. Bake and then sprinkle sesame seeds and serve with rice.

Any fish fillets (salmon, cod, haddock, sea bass etc)
In foil parcel with splash of white wine, lemon juice, fresh herbs and seasoning. Bake for about 15-20.

This is one of our favourite things (esp in UK asparagus season) but it does have new potatoes in.

It’s a one-pan thing (love those!) but cooks in stages, so you could make it without the spuds, or add a substitute.

Pilchards only tomato
Tin chopped tomatoes
Paprika
Mixed herbs
Garlic
Veg- courgette,mushroom whatever
Mix and cook serve with rice

I tend to find that baked wrapped in foil works well for most fish. Smokey fish like kippers just need some butter, trout and salmon taste great with a bit of a kick and a little sweetness (soy sauce and honey, sweet chilli sauce, that kind of thing) and I love herbs with white fish like coley or cod, parsley and dill are favourites. I think they all taste marvellous in cheese sauce, but then I would say that because I would eat cheese sauce on everything if given the chance. I can't get enough of it.
