What can I make with fennel?

I have never tried it.

It's supposed to taste of aniseed. I like aniseed ( Pernod!) although I can't imagine something aniseed as part of a meal...
I'm not sure why I bought it really
It was Christmas shopping madness.

Just use it in a salad, or, as we do here (Italy) chomp on chunks of it as a palate cleanser.

There are recipes for it (usually gratin dish type things) but tbh, it's very watery and IMO doesn't cook well.

You can use some in a fish stew - slice / chop finely and sauté with the onions, then proceed as normal. Or if you have quite a lot, slice finely, sauté slowly until soft, then use as base on which to roast fish. Or a refreshing salad - slice finely (are you sensing a theme...), add peeled, de-pithed orange slices and olives, drizzle of olive oil. Excellent with feta or goats cheese.

I always thought I wouldn’t like fennel because I don’t like aniseed then tried it in a dish once at Jamie’s Italian And was converted - this was pretty much the dish www.jamieoliver.com/recipes/fish-recipes/fish-in-a-bag/ I left out the olives as I genuinely can’t stand them

I make fennel risotto finished with lemon zest and then topped with rocket.

HFW has a great recipe in his veg every day book for a fennel and lentil salad with a wholegrain mustard, honey and lemon dressing

Roast it. I did a lovely meal for friends on NYE, a Jamie Oliver one that had roasted fennel, loved it.

I think it is over rated and prefer fennel seeds.

However as you have it........... Grin

My friend makes a good coleslaw with fennel. It’s amazing with pulled pork.

Fennel is good with fish or chicken.

I’m too lazy to link but google it with fish/chicken and it’ll throw up some good bbc good food recipes.

Fennel makes a wonderful gratin. I usually simmer with garlic in a little vegetable or chicken stock and when the liquid has mostly evaporated, transfer to an ovenproof dish, add a little double cream and top with grated Parmesan and bake until golden. This looks good too.

I roast it with onions or shallots, drizzled with olive oil until the edges are caramelised. I usually serve it with pork.

Fennel and carrot salad- use a potato peeler to peel thick strips of each into a bowl, bit of oil and lemon or lime juice, if you have any cumin seeds dry fry them and sprinkle over.
