Does anyone have a good recipe for brown? trout please? It came from the River Severn and weighs just under 2lb with the head on. I'm getting very confused with recipes for Rainbow Trout and Sea Trout. Many thanks.

Dh catches but doesn't eat trout he fillets it for my dad anyway wrap it in foil with butter lemon slices glug of wine if you fancy season and bung it in the oven for 30 minutes.

Thanks Mrsjayy. Do you know if he just fillets it and then essentially leaves it whole or does he open up, butterflies the fillets?

He opens it up and does it that way.

I would clean it , full its tummy with herbs and cook whole wrapped in foil in the oven.
Alternatively fry fillets in some brown butter with almonds or capers and parsley.
