Gluten free veggie dinner party ideas

We’re vegetarian. We have non vegetarian friends coming for dinner tomorrow one of whom has coeliac disease. Any ideas for good main course ideas? They’re not very adventurous eaters, typically meat and two veg. I was wondering about paella?

Traditional paella has seafood and possibly other meats so not sure that that is a good idea.

Just roll do a gf pastry. You could use it to do a leek, Stilton and brocolli tart, serve with herbs crushed potatoes and veg or salad

I make the vegetable pulao from this weekly for my family. Its vegan and we are a meat eating family and love it. It's also gluten free. Made it on xmas eve for visitors and they loved it (and they can be fussy with veg!)
Easy to make, delicious and healthy too - perfect for new years. Also got my youngest deciding that pomegranate is her favourite fruit now 🤣
