Any ideas what I could do with leftover smoked salmon? I mean, eat it obviously, but something for a hot meal preferably

Scrambled eggs or omelette with a nice salad?

Oh, I was just going to say eat it on brown bread with thick butter!

But maybe make a quiche? With broccoli or asparagus if you have any. Or just mix with pasta, lemon juice and crepe fraiche.

I'm just using up mine - pasta with Philadephia, sweet corn, broccoli and smoked salmon.

Something like this:

Or if you are me and lazy, just pasta, philadelphia, smoked salmon, salt and pepper

Chop up small and mix with tagliatelle, fresh herbs, parmasan and creme fraiche.

Ooh a creamy pasta sounds perfect. I don't have any creamy base though just milk, cheddar, and a Boursin. Might have to shop again. Do have asparagus but no eggs left which are my go to with smoked salmon normally

In a sandwich with cream cheese or in a quiche.

Hot cooked pasta and steamed asparagus, stir the boursin through it, chop in the smoked salmon, add generous amount of freshly ground black pepper.

Can I come round?

Make a gratin with layers of sliced potato & smoked salmon, some cream & the cheddar grated on top.

@BeyondMyWits

That actually sounds so good I may have to do exactly that

The Boursin would melt nicely into the pasta.

Your milk and Boursin is a perfect base for pasta and smoked salmon!

@DariaMorgendorffer literally just had that for dinner! SS baked with potatoes, cream, thyme and caramelised onions

It's rare there's any Boursin left to cook with usually it gets eaten the evening I buy it on crackers between me and my middle child. They were a £1 in Tesco a couple of weeks ago so I bought a few!

Whisk your Boursin into a bit of milk over heat.

@claptomania So delicious!

Or put a splosh of white wine in the pain before the Boursin (then no need for milk/cream).

Smoked salmon quiche is lovely.

Or freeze the smoked salmon. It comes out fine.

Just went to make fabulous creamy pasta and discovered the smoked salmon was out of date. Devastated. Why didn't I put it into the freezer? I might have to go buy some more and make a pasta and a quiche. Kicking myself.
