Can I freeze this?

Hi all,

Making the below recipe for Christmas Day dessert.

Can I make the sponge bit and freeze it, take it out and ice, fill and stick back in fridge on Christmas Eve?

I normally wouldn’t hesitate but the recipe says it can only be made up to a day in advance, so I’m not sure.

Sounds lovely, sponge cakes freeze really well so I would say yes go for it (although never tried to roll a roulade post freezing)

I was going to roll it while still warm, with the paper and sugar inside so it’s easier to unroll and fill later.
