Lamb shank recipe please

I’d be grateful if anyone would recommend me a lamb shank recipe-we’re having them for Christmas Day and I plan to cook them slowly (oven in giant pot, don’t have a slow cooker) and want a really rich tasty sauce to cook them in. Dc will have it but I expect I need plenty of red wine which will cook off. Want to serve with mash and green veg.

Buy a slow cooker, it's worth it just for lamb.

Put in the slow cooker and leave. Add nothing.

Fat will melt out so when you are ready pour this into a pan, add flour, water and red wine to make a sauce/gravy.

I ever use a recipe but it always tastes amazing

Brown shanks- I do in the oven on super high roast function in the same big le crueset pot. Turn so brown all over

Then turn oven right down to about fan 120

Add finely chopped onions or halved shallots
Chopped celery
Garlic
Big Squeeze sundried tom purée
Blob of Unami paste
Mixed frozen herbs or fresh
Rich beef stock pot from knorr
Tin tomatoes or two if loads of shanks
Good glugs of red wine

Cook for ever

I usually double up the sauce. It freezes well, & can then be used with chicken quarters etc.

Usually brown them on stove top over high heat first, then lower heat and add in onions, celery, chopped carrot, lots of red wine, few cloves garlic, pepper, salt and the secret ingredient - a couple of anchovy filets. Cook in oven with lid on low for a few hours. It absolutely doesn’t taste fishy at all and just makes the gravy taste absolutely beautiful.
