Diabetic meal ideas

I want to start meal planning and put together a list of meals that will cover 1-2 weeks that I can rotate. We're not in the UK but can get most stuff we do at home.

Can I ask for some inspiration or your lists if you cook low carb?

I've got:

Prawn or chicken and pepper curry with cauli rice.
Courgetti spaghetti.
Lettuce fajitas.
Chops etc with lots of veg.
Chilli & garlic prawns.

Any other ideas?

It depends how low carb you are looking for, just cutting bread, pasta, rice, couscous, potato or looking at the carb count of other root veg, legumes, pulses etc?
Paprika chicken skewers with salad or veg
Salmon with lime, chilli and spring onion with stir fried garlicky green beans and broccoli
Chicken tray bake with peppers, courgette, red onion

I think I need to cut them all out for now, so no sweet potato or carrots etc, or beans.

Lentil soup and dhal is another for my list, but I'll have to test and see what effect they have.

Lasagna with leek or aubergine instead of pasta sheets is another I was going to try. I've done it before with leek and another time with courgette, and I did use butternut squash sheets from Sainsbury's once but I can't get those here and although I cook from scratch, I don't think I can be arsed to cut butternut squash into sheets.

Mushroom stroganoff/risotto with cauliflower rice, paella or jambalaya again made with cauli rice, you could do your garlic prawns as a ‘pasta’ with courgette noodles, veggie currys and stews made with red lentils are filling enough to not need anything with it
