Plant based meal inspiration

I'm trying to go plant based, with a little resistance from DS1. I'm so used to planning from the meat that I find it hard.

What are your go to plant based meals?

I like vegetable chilli

Risotto with peas, garlic and cheese

I like sweet potatoes, but what to have with them?

At the risk of sounding ungrateful, it all looks rather 'beany' to someone new to it- I'm struggling to make dishes feel different from each other.

I suppose I have

Curry
Chilli
Roast veg
Risotto
Pasta pesto or tomato sauces.
Leeks/cauliflower with cheese sauce.

So I need to do something like nutballs/beanburgers to add variety.

I'll look closer at your suggestions!

Ha! Looking more closely I see felafel, bean burgers and lentil meatballs and a pie!
