Vegan alternative to meat for Christmas dinner - help!

DH and I watched The Game Changers documentary today (about plant based eating) and it was really interesting. We've been doing meat-free eating during the week (for health and environmental reasons), but this has inspired me to try and have a crack at a fully plant based diet.

What to do for Christmas dinner? I usually roast a chicken with the trimmings. The veg stuff still works (I already do my roasties and yorkshires in sunflower oil rather than dripping), but I'm not sure what to make for the main dish.

All suggestions welcome - I've done some googling and nut roast or mushroom roast seems to be the most common options.

I made the mushroom Wellington from the Bosh cookbook last year and it was delicious. I made the quantity in the book but there was only me that ate any of it, so I was eating leftovers for days, if I make it this year I will half the recipe quantities.

Nut roast!! With cranberry sauce mmm.
If veggie I also have cauliflower cheese, stuffing, Yorkshire’s, roast potatoes, roast carrots and parsnips, veg.

That's a fantastic documentary! My family watched it as meat eaters, and haven't eaten meat or dairy since.

Have a look at some of the supermarket vegan options this year.
I’m eyeing up this wellington from Asda groceries.asda.com/product/food-to-order/asda-extra-special-vegan-wellington-with-a-rich-red-wine-gravy/1000181597029 but there are several good options in Waitrose such as these vegan root en croute www.waitrose.com/ecom/products/4-vegan-root-en-croute/566206-695998-695999 and the chestnut and mushrooms grills www.waitrose.com/ecom/products/waitrose-frozen-2-chestnut-mushroom-grills/898625-307524-307525

I invent a Wellington for myself and daughter. It has two different parts as she doesn't like mushrooms and I love them. I make layers of goat cheese, sweet potato, chestnuts, spinach etc all wrapped in pastry like a giant sausage roll. Leave the goat cheese out for vegans.

We are going to do the bosh wellington this year. We usually have a nut roast and everyone loves it. We have all the veg with freshly made onion gravy and also a spicy peanut and tomato satay sauce.

We're going to make vegan pigs in blankets with Linda McCartney sausages and the Quorn Vegan Smoky Ham, and maybe try the new vegan pies they have in Lidl.

In fairness my favourite bits of the dinner are the trimmings. I need to try out oat milk and see if it will do for making bread sauce (my absolute favourite!).

I've got the Bosh cookbook but haven't tried anything in it yet, so will take a look at the nut roast.

The doc was fascinating. I like meat but feel guilty about eating animals and I am concerned about the environmental impact. Having just watched some really compelling stats about health and wellbeing, it felt like a no-brainer to give it a go!!

I've bought a main from Morrison's, but Aldi also has various options I noticed. Linda McCartney sausages are good too

I've bought a Waitrose nut roast, and stuck it in the freezer.

I usually do stuffed butternut squash, or big roast mushrooms, or a pie.
