Peppers
(11 Posts)DS2 went through a phase of eating raw peppers. He’s now suddenly stopped and I have five peppers in the fridge to use up. What can I make? DC won’t eat ratatouille or peperonata and I’d usually make fajitas but don’t fancy them.
Stuffed peppers?
Sliced and put into a sausage casserole. As part of a side salad. Shakshuka. Jerk chicken wraps. Jambalaya. Paella.

Thanks all. I’ll probably do a bean chilli and if there’s any peppers left after that, maybe a paella in the week.
this red pepper soup is delicious and I can't stop making it - I also add a bit of cream to it.
It freezes well too.
I put green pepper in bolognaise. I had some left over the other day and stuffed the red and yellow peppers with it and it was 👌
Stuffed peppers with minced lamb, brown rice, herbs and nuts, topped with grated cheese. Serve with salad.
Or goulash - chunky pieces of pepper, carrot and onion with beef in a thick, rich smoked paprika tomato sauce with sour cream and mash.
I make a lovely Spanish stew that is red peppers and rabbit with white wine.
Roast the peppers until just blackening, puree them, and add things like onion, garlic, salt, to make a nice pepper sauce that you can freeze. It works well added to tomato sauces such as on pasta or pizza, or you can simply dollop on top of veggies. It doesn't have any offensive textures and tastes amazing!
I always add red pepper to prawn and potato curry.
