(26 Posts)I’m clearing out the freezer ready for Xmas food and discovered I have 5 packs of chicken thighs languishing in there.
Any good recipes? I always do traybakes/stews/roast them so looking for something else!
I've just got a pack of chicken thighs delivered and it's twice the size I thought it was going to be. Luckily I love chicken thighs.
If it's skin on, bone in I do a tray bake with loads of lemon, oregano, olives, feta, red onion and drizzle with olive oil.
Also like to marinade in buffalo hot sauce and have with a blue cheese/sour cream dip and celery for dipping.
Curries are also great as you can cook for ages and they won't dry out like breast does.
Chop up for stir fry, fajitas, chicken and mushroom pie, paella (with seafood) .
If they're bone in, then this Persian chicken stew (https://www.redonline.co.uk/food/recipes/a502859/sabrina-ghayour-saffron-chicken-and-fennel-stew/) is lovely.
Chicken thighs make great Teryaki chicken too.
Or stick cheese in the middle, wrap in bacon and bake with barbecue sauce for hunters' chicken.
Jack Monroe's Spanish chicken is great and so easy. Couple of onions, loads of smoked paprika and a tin of mandarin's, simmer until chicken is cooked. You could add, peppers and chilli.
I think it's chicken thighs in Nigellas chicken and pea tray bake affair, that is surprisingly tasty
also I think it is DolMio that sell small foil sachets of goop for tray bakes if you cba to diy it
I often do a cassoulet sort of thing with sausages and white beans and thighs, if you do it in a roasting tray the skin gets lovely and crisp
I did this last night:
Skin on chicken thighs in a roasting tin. Toss in olive oil. Scatter on Zatar Fatoush (moroccan spice mix) and salt and pepper and mix to coat the thighs.
Add pieces of preserved lemon and a halved skin-on bulb of garlic and roast til crisp. I served it with salad and used olive bread to mop up the juices. It was, in the words of DS, "epic".
Jamie Oliver’s Spring chicken pie is made with chicken thighs and it’s a big hit in our household!

Lidl do a spanish chicken jar sauce i chuck over the top of chicken thighs!
We love them with Nando's spice rubbed on and then baked in the oven.

This is my favourite chicken thigh recipe. It's a type of chicken tagine, with ras el hanout - amazing spice mix seasoned pioneer chicken tagine
Delia Smith’s oriental chicken is loved by everyone here. If I can be bothered I take the chicken at the end and keep warm while I reduce the sauce in half, makes it even tastier. It’s low fat too

We often do BBQ pulled chicken with thighs, works much better than breast, very easy too

This is really easy and really nice. I’ve made it a few times. It’s a forgiving recipe where it can take additional ingredients (for example, olives, chopped up peppers) and I’ve made it using both skinless thighs as per the recipe and with skin-on thighs.
Leftovers are nice reheated thoroughly (cover the dish and reheat in the oven) or as a pizza topping.
If they have a the skin on rub them with a mix of garlic salt, pepper, paprika and chilli if you like it hot. Sprinkle with lemon juice and bake in the oven.
Skinless - stick in the slow cooker with onions, red wine, stock and mushrooms - serve with mash.
A;ternativer, put in the slow cooker with passatta and bacon pieces (or chorizo) season add tinned beans, kidney or cannellini.
Skinless boneless, bash them flat and stuff with mozzarella and herbs.
Curry is good too.
