I usually use a jar of curry paste and coconut milk, but I want to use the jars of spices that have been sitting folorn and unused on the rack. But I don't know what kinds of quantities and I don't want to ruin dinner!
So I have:
chicken and veg
Turmeric
Ground coriander
Ground cumin
Mustard seeds
Curry powder
Garam masala
Cumin seeds
Dried coriander leaf
Coconut milk
Tinned tomatoes

Help me please!

Do you have an onion?
If so I would fry onion in oil or butter for 10 mins on low heat and then add 1tsp of each of ground coriander and Garam masala and a small amount of turmeric. Cook for 1 min. Add chicken and seal until brown then put on a tin of toms and a tin of coconut milk and simmer until the chicken is cooked, maybe add some vegetables too into the mix. Or chickpeas if you have them are good

You can make chicken korma with all of these ingredients. Google a recipe and substitute the yoghurt / cream with the coconut milk

Put the seeds into hot oil till thy pop, add onion, garlic, if you have it, ginger would be good too. Then the vet, sweat them a bit. Then the dry spices. Add the chicken and brown it. Then the tomatoes and coconut. You can make it as hot or mild as you like

Thanks murderess. Would you use all the spices I've mentioned? And how much would you put in?

How long have the spices been around?

They don't last forever, & the ground spices in particular will have lost a lot of flavour.

Smell & taste them before using - use your senses rather than "Use by" & "BBE" dates .

Thanks handbags, some of them might be a little past it, now that you mention it ☹️

All those spices work together and are found in curries. A good teaspoon of the dry spices, more of the curry powder, perhaps a tablespoon. The coconut milk will cool things down.

Fry onion and garlic if you have it. And bit of chilli if you have it.
1tsp turmeric, coriander, cumin plus coconut milk. Poach chicken in the sauce you have made. Add chickpeas and some spinach or green beans if you have them.

Nigella chicken and cashew nut curry is similar to the above.
