I've cooked it in chicken stock and added onion, courgettes, peppers & tomatoes and a pinch of chilli - my DCs aged nearly 3, 4 & 5 all ate it (they prefer strong tastes).
That was my first outing with quinoa and it was a success so I'm going to cook it similarly again but stir cooked slivers of bacon or chicken into it.
I have an enormous pumpkin patch at the moment so I shall also be seeing what baked small halved pumpkins stuffed with quinoa is like. I'll probably use a lot of spice/seasoning to lift it. I might even give it a crunchy breadcrumb topping? But not sure about that yet!
