Best gluten free flour for baking?

DH is gluten free. I love baking, but I'm finding it hard to find a decent substitute. I've tried Doves farm, but I found it grainy and didn't make a nice texture of cake.

Can anyone with more experience of gluten free baking suggest a flour?

Marks and Spencer own brand is a bit softer IME.

Bob’s Red Mills GF Flour is the one. You can get it online. I honestly can’t tell the difference between that and bog standard SR.

Watching with interest, I often use doves farm self raising and it makes a brilliant cake! Always turns out moist.

I think it depends on what you are cooking, I can find Doves grainy in some things - Parmesan dumplings in particular. But excellent in others - the doves farm hot chocolate cake.

Buckwheat flour is brilliant for baking. Buckwheat contains no gluten and is not a wheat - it is part of the rhubarb family.

But some caution depending if DH is coeliac or eats gluten free for another reason. I think the most easily sourced brands of buckwheat flour have smallprint warning that the buckwheat is ground in a facility that also processed wheat so cannot be guaranteed 100% wheat free as they can't guarantee that a grain of wheat didn't fall into a ton of buckwheat so if even a tiny trace of gluten would be a problem then research will be needed to find a different brand.

But I have made all sorts of cakes pastries etc with buckwheat and it's brilliant.

If you can lay your hands on a book called How Can It Be Gluten-Free? you'll find a recipe for a very good GF flour blend. It calls for lots of flours but really does work well in baking.
