Gluten & Dairy Free Inspiration Please!

I've recently had to give up dairy and gluten to help with a medical condition. I'm finding it a bit tough, but getting used to it. I am just struggling to not eat the exact same things every week and would love it if anyone could suggest things I could make please.

I know I can search recipes, but I'm just coming up with either a load of vegan stuff (and I do eat eggs and meat), or really technical long recipes with tons of ingredients. I can cook, but nothing too fancy, and I need quick things I can make after work. Oh and I don't like seafood or lamb.

I usually have:

GF sausage and mash
Chilli and rice
Jambalaya
Eggs baked in tomato sauce
Beans on toast or jacket potatoes with beans
Thai curry
Roast dinner at weekends

If anyone has recommendations for a good strong cheese substitute I'd love to hear them - I have tried a few brands but they're all a bit bland.

I'll link the recipes below:

korean beef bowl
chicken stuffed 'biscuits' (essentially chicken pie bites)
crepes (fill with a thin layer of mashed potato and chopped ham and mushroom. sounds weird but its really good!)
quiche

Soup - make in bulk and freeze some for quick dinners. Serve with baked potato or GF bread/toast.

Oh, and you can make GF and DF half pound cake using ground almonds instead of flour and Pure instead of butter.

Leftover roast with ratatouille & rice.
Pork loin cut long ways but not all the way through, stuffed with GF (M&S!) stuffing and then all wrapped in prosciutto - roast.
Sweet potato as jacket potato (cooks faster) with tinned mackerel in tomato sauce.

Also if you like chips from a chip shop it's worth asking if they have a separate fryer it's quite common these days, even on mobile chippies. Our local has a GF dedicated member of staff each shift to ensure no cross-contamination.

M&S do a dried GF chickpea pasta which is better than most.
