Brainstorm me please

Hello,

DS has to make a 'balanced" meal for his food and nutrition lesson. He has decided on Salmon, rice and sugar snap peas.

I dont eat fish as I have an intolerance it so I have no idea what goes. I feel he probably needs to jazz up the rice and possibly lightly dress the salmon but what? He has limited time 1.5 hours so that needs to be taken into consideration.

Ideas anyone?

That's a really quick meal to cook. We always microwave our salmon with lots of black pepper and a squeeze of lemon juice. Maybe he could swap the lead for salad? He could then do an interesting salad with a tasty home made dressing?

Make sure the rice is brown rice or pick quinoa instead. I'd keep it as is with a slice or two of lemon in a tin foil parcel in the oven. Add another couple of portions of veg.

In the last minutes pull off the salmon skin and either grill or dry fry (without oil in a very non stick pan) until its nice and crispy

If he wanted to jazz it up a bit he could do a foil parcel with a bit of soy sauce & fresh ginger in with the salmon - I agree brown rice & steam peas v lightly so still crunchy

Another vote for cooking the salmon in a foil parcel in the oven as suggested above. Not only quick and easy but no washing up either, especially useful as he has limited time.
Is he allowed the use of a microwave? If so, he could cook a sachet of jasmine rice in the microwave. It would go well with his Chinese style fish, and again no washing up.
If he can take in something pre prepared, he could make spring onion tassels in iced water at home, to use as a garnish for his dish.
