From a local farm: 'enjoy the splendours of the season'.
Sample box includes potatoes, onions, carrots etc.
My box? Contains as follows:
* pink fir potatoes.
* black kale
* 2 x patty pan squash
* 2 x yellow peppers
* 1 giant marrow
* 1 turnip
* bag of fresh chillies
What??! I have guests this weekend and wanted to cook a lovely meal based around the contents of the box. This has really thrown me though.... Any suggestions?
I have pork in the freezer but no other meat as mainly eat veggie myself. Loads of tinned & dried pulses. Others, just this veg box and 4kg of apples!
I have today made HFW'a 'Tupperware chorizo', and I have many local apples, so was wondering about a pork/apple/cider dish?
And a turnip/squash gratin? Could add slices of marrow, but will that just dilute the sauce? Turnip? Ugh! Making the best of a bad lot! But too much white/creamy/cheesy flavours?
Would certainly need something fresh, green and zingy to liven it up a bit - and marrow and kale don't spring to mind!
What would you do? Such an unfortunate veg box.
You could stuff the marrow (perhaps utilising pulses, onions, squash and pepper)?
Kale can be made exciting by steaming it and then seasoning with cracked black pepper, sea salt and grated parmesan. One of my favourites!
Pork and apple is always a winner...

I would prob roast up all the other veg and stuff the marrow with it, with chilli & garlic & seasoning?
Maybe make a bit of a ratatouille for some tomatoey sauce on the side.
Jacket potatoes would be nice with all of the above.
I have a marrow recipe which goes down well here.
You need full cream, proper stuff, not the value type as it goes watery, potatoes, firm ones, not floury, butter and garlic, plus seasoning. Can also use grated cheese but I don't.
Peel marrow, cut it into sections lengthwise and remove seeds, it will need to eventually fit into a shallow ovenproof dish when laid out flat. Boil a large pan of salted water and put the marrow pieces in for about 10 minutes, remove and drain well, dry off a bit. While it is drying off, cut potatoes into slices, either scrubbed or peeled, whatever you prefer, and put those in boiling water for at least 10 mins. they need to be softish but not breaking up. Drain.
Lay marrow side by side in strips in dish, add seasoning. Melt a good chunk of butter and add garlic, chopped or finely sliced depending on how garlicky you like your food. Do not cook it, just mix together, then spoon it onto the marrow.
Lay potato slices over the marrow, overlapping them. Pour cream over the top. Bake in a med/hot oven with foil on top for about 30 mins, remove foil and cook until it starts to colour. You can put cheese on top and melt or grill it.
I cook it for about 40 mins - an hour but we like it well done and crispy. Usually serve it as a side but I like it as a main.
I would do a Moroccan style menu
Starter - roasted red pepper and squash soup with chilli
Main - tagine with some of the pulses you have (chickpeas?), the potatoes, marrow, onions, chilli. I would stir in some of kale towards the end and serve it with couscous and honey roast turnip
Dessert - spiced apple tarte tatin with vanilla ice cream
Roast the kale....keep an eye on it though as it doesn't take long. Just let it crisp up....add salt..gorgeous!
Thinly slice the marrow and make a lasagna with with the sausage meat and squash (adding lentils if needed).
If you have lots of nice apples I would make a turnip and apple raw salad. Just grate it all together and dress with a lemony dressing. Add some seeds or nuts for crunch. You could add shredded kale as well.
Tandoori pork with veg curry side? Naan and rice?
Then do a massive apple crumble for dessert?
Or, roast porl, homemade apple sauce, roast spuds (out of veg box) and roasted pepper and onions?
Maybe with marrow, chilli and chickpea soup to start?

Chop the potatoes into smallish chunks (don’t bother peeling) and boil. Chuck the black kale in a few minutes before they’re done. Drain and add butter and Grated cheese. Roughly mash together.
