Pickles and chutneys/jams

I’ve just finished a batch of courgette pickles having not made anything like this for ages.

What are your favourite pickles, jams and chutneys to make?

I did a fridge strawberry jam a while ago and it was too sweet but a lovely texture and we had it on pancakes with Greek yogurt. I’m feeling inspired to make more things to put in jars if anyone has any ideas.

Piccalilli is good, also Butternut Squash Chutney.

Blackberry jelly. Plum jam. Any chutney containing tomatoes, Mediterranean chutney (tomatoes, peppers, aubergines and courgettes) and pear and walnut.

It's been a while since I have made anything like this but before Christmas one year I made Delia's Chutney and it was lovely.

I used to also make Lemon Curd regularly for DH who loves it.

I was saying I’d try lemon curd the other day! Do you have a recipe? We go through a jar of the amazing Tiptree stuff every few weeks.

Thanks for the Delia link, I’ll have a look. I was browsing the good food site yesterday and there were rave reviews for Mary Berry’s Christmas chutney but the quantities are vast and it looks like a lot of work!

I used to make a red onion chutney for Christmas every year ages ago and can’t find the recipe now.

Despite owning a lovely and easy to use fill in your own recipes book, I’m crap at actually putting stuff in it.

The courgette pickle looks brilliant but I’m going to let it do its thing for a week or so.

For Delia's Christmas I used 1 teaspoon of allspice instead of the allspice berries (which are harder to find) and it turned out fine. I keep meaning to make it again but the timing has never been right.

I also have Mary Berry's Chutney recipe tucked away but have yet to make it. It sounds more vegetable based whereas Delia's is more fruit based.

I think I either used this recipe for the lemon curd:

Just been looking at my notes on that recipe, Anne.

I first made it in 2003!!

I always warm the vinegar & dissolve the sugar first (as I do with any chutney) to make quite sure all sugar gets dissolved before adding any of the other ingredients.

My notes say to cut back on cayenne & up the ginger & don't be to generous with the sugar. (probably about 30g or so less sugar).

I’m an amateur preserver but I’m feeling inspired to fill my pantry with lovely things for the winter. Will hit up the market for some end of the day fruit and veg bargains and get making.

Really appreciate your tips. Cayenne is often a bit hit and miss.
