Nice rice dish to go with coconut jerk chicken kebabs???

Bought some coconut jerk chicken kebabs yesterday and thought it would be nice to make a rice dish to go with them.

I'm thinking maybe cooked in coconut milk, or with raisins?
Can anyone suggest a nice recipe?

I normally serve it with a fish curry but I don't see why not.

Heat 1 tbsp veg oil in a saucepan with a close fitting lid, then add 250g basmati rice. Stir it around to get a good coating of oil then add 1/2 tsp turmeric, 1/2 tsp mint, stirring to mix. Squeeze in juice of 1 lemon and add 500ml water (needs to cover rice by a god couple cms). Stir in 1/2 tsp salt, put lid on, bring to boil then simmer until all water has been absorbed (approx. 15m). While rice is cooking toast 1 tbsp black mustard seeds. Turn rice into a bowl with mustard seeds and zest of lemon on top.

It's delicious. Sorry it's taken a while to post but I've been jumping with DS.

lemon rice sounds great - would be nice comliment to the coconut.

Thanks for the recipe, it did go nicely even though I didn't have mint!
The kebabs were bought ready marinaded from a butcher in Sheringham...sorry, I'm not much of a cook! LOL
