Just that. The rest of us will have pork belly, rolls, various salads, so I would like to make something nice in advance for the veggie guests. All I can think of is spanakopita, but I made that last time.

I should have said, ideally I want something that will fit with the other sides, shepherd's pie doesn't really go so well with salads.

I made a fabulous kale and ricotta conchiloigne thing recently, it's a Gizzi Erskine recipe. It went down a storm and because of the giant pasta shells it was easy to eat one handed (if that's a concern). I served it with focaccia and salad.

Not sure if it would freeze but Hugh F-W’s roasted root vegetable frittata is delicious and couldn’t be easier to make.
