What is your happy food or happy meal?

I have recently learned to cook a red bean and rice soup and it's gorgeous. I made a big batch and had it for lunch this week. It made me happy to think about it at work in the morning. It made me happy to cook it and eat it. It was tasty, cheap, filling and healthy Smile I wish all my meals were like that!

Have you got any meals or foods that make you happy?

I love lentil dahl - it's really simple to make but you can jazz it up in lots of different ways (e.g add any leftover meat like roast chicken, prawns etc you have), have it on its own or as a side dish, eat it hot or cold and you can make a huge pan of it and have it in the week

And porridge is another one that just makes me feel happy - made with half water, half milk and a little golden syrup on and it's almost as good as getting a hug

Then of course all the usual things, dippy eggs with soldiers, Heinz tomato soup, hot toast with melted butter and honey, mashed potato....

Ooooh beans on toast. Beans have to really stewed and thickened with lots of Worcester sauce added. Proper butter and seeded bread toast with grated mature cheddar sprinkled over the beans. And a good dollop of mayo on the side. This makes me VERY happy indeed Grin

Hot buttered toast, definitely. Or crumpets / muffins.

Also porridge. I make it with cashew milk and it's so creamy. I have it every morning and add loads of different types of things to it.

A really buttery, cheesy baked potato.

I recently had my baby after 3 months of gestational diabetes and I made a bowl of porridge (which I could never have tolerated with GD), with full fat milk, topped with blackcurrant jam, a blob of almond butter and a drizzle of double cream. It was absolute heaven and I could have eaten ten bowls of it (and then probably been sick!)

Anything with a creamy cheese sauce (apart from cauliflower cheese Envy)

I love a bowl with brown rice/quinoa, salmon, crunchy salads, spinach and topped with seeds - tastes so healthy and satisfying, makes me feel happy.

Recipe for the soup please!

I’d love a good dahl recipe if anyone is willing to share (I like spicy!)

My comfort sick meal is poached egg on Welsh rarebit. My mum used to make it after we had been ill to start building us back up.

My happy meal at the moment is dirty veggie scramble. Veg (whatever is in but generally mushroom, onion, tomato, and spinach). Eggs. Tabasco. Scramble together. Maybe top with jalapeños and cheese (I’m trying to do without the cheese as I need to drop some baby weight). It’s healthy and filling without being heavy feeling, quick to make and keeps me going ages (I never needed breakfast pre baby and now I’m dying by 10am if I try to skip it).

Cheese on toast, must be wholemeal bread, extra mature cheddar.

Cottage Pie

Toad in the hole with peas and mash potato - no onion gravy though, just normal gravy.

Cod, chorizo and butter bean stew

Perfectly cooked fillet steak with the best horseradish and a side of triple cooked chips

Comfort food to me is sausage, mash and baked beans with HP sauce on the side.

My favourite posh meal or going out meal usually involves lamb. Lamb in a curry or a lovely roast lamb Sunday lunch.

I’m such a loser but honestly really good hummus makes me happy! And this steamed lentil and bruschetta dip thing I make with fancy crackers to scoop it up with

Pre-veganism it was a chorizo and butter bean dish I used to make regularly. Actually that would still make me very happy!!

My happy food right now is an açai bowl, with chopped banana, strawberries, sliced almonds, chia seed, granola, and drizzled with honey.
I'm addicted, but at least it's semi healthy.

Co-op salted toffee pecan granola - it's probably worse than having a bowl of ice cream for breakfast but it's amazing!

Macaroni cheese, I make it with halved cherry tomatoes stirred through and my sister makes it with bacon and a nice crispy top.

Scotch Broth, made the traditional way with lamb bone stock and chunks of lamb. My butcher makes the perfect meaty broth for £1.39 for a 500ml tub which is heaven.
