Freezable green soup recipes

I keep a small supply of soup in the freezer at work ready for days when I can't bring something from home.

At the moment this is all lentil & tomato, but I would love a recipe for something with lots of green veg that ideally doesn't need much blending but still freezes well.

Can anyone recommend a recipe?

Brocoli is very good in soups, either a brocolli and stilton if you like it, or I do a generic 'garden soup' which is essentially a base of onion, garlic and carrot (sometimes celery) sweated off, then I add whatever veg is knocking around the fridge, brocoli, parsnips, leek, squash are particularly good. I usually include a little potato as well which naturally thickens it without the need for any cream. Simmer all the veg in stock until cooked then season and blend to desired consistency...

Otherwise if you'd like leafy green veg then minestrone is a nice hearty filling soup? Something like this

Spinach is great in soups, and cabbage and leeks.

Pea and mint
Courgette and potato

My Dad started making potage vert when I was pregnant - as a vegetarian he was concerned that I wasn't getting enough iron, which was very thoughtful! It has spinach and watercress in it so is a good source of iron.

Obviously I substitute vegetable stock for chicken stock. I also don't bother with the cornflour and sometimes add a little potato to thicken it. If you were to freeze it you'd need to do that before you added the cream and cornflour.

This is one I make fairly often. Very tasty and you can add in extra greens such as frozen spinach or broccoli. I don’t bother peeling the courgettes, it makes the soup pale green.
