Help me use up these red lentils!

Have so many of them. Sooooo many. Have looked online for exciting lentil recipes, but the ones that really appeal to me mostly use green or brown lentils. Red lentils kind of just turn to mush/melt into what you're cooking, and so I just keep seeing the same recipes: chillis, soups, daals. Anything else? Less soupy, less stewy? Or it could be a stew if it's interesting! What are your favourite recipes for red lentils?

we make up a barley(similiar),rice dish.so cook down some garlic onions,leeks carrots,peppers,celery,courgettes,sweet potato( basically any veggies)then add your water some stock cubes, rice,barley and red lentils.makes a really nice dish.

I often chuck a couple of handfuls and some extra water into whatever I'm making, e.g. Bolognese, curry, shepherd's pie, etc... Bulks it out a bit and means you can use less meat.

I made lentil and gram flour fritters.
Or lentil loaf made with with grated cheese.
Or truckers Dahl? This is nice.

Probably not much help as you are asking for not chilli or soup, but Nigellas veggie chilli recipie is awesome. As is Tarka Dhal and handfuls thrown into soup.

Boil lentils in stock and curry spices to taste until soft. Drain well and spread on a plate to cool. Once cooled mix up with beaten eggs and whatever chopped veg you have handy ( usually peppers here) maybe add a handful of grated strong cheese.. tip into greased tray then oven bake for around 30 mins till set. Slice up.

Eat hot or cold

A tasty, snacky recipe is for lentil vadas (like fritters, basically), replacing yellow lentils for your red ones:

Lovely served alongside some sweet chilli or similar dipping sauce (you can dial up/down the chilli heat of the vadas to taste).

I like to mash them into sweet potato and use as a topping for a shepherds/cottage pie. V high in iron, great for DCs

I do lentil and tomato soup - which started out as the Cranks recipe but I've changed over the years. It's my winter soup go to.
