I want to start cooking more fish and wanted some easy recipes like fish cooked in foil.... ideally not samon (not the biggest fan) also not a lover of lemon.

I would like something tomato or sweet chilli if anyone has recipes to share Grin

I’m currently doing the same thing and I really like fish topped with harissa.

Put any fish in the middle of a big square of foil. Scatter over finely chopped garlic, ginger, julienne carrots and a glut of soy sauce. Fold sides of foil up to make an enclosed tent for fish to steam in. Oven bake then serve with rice or noodles.

I do salmon but you could do cod or any white fish.
Cover with a layer of pesto and breadcrumbs. Wrap in foil. Serve with potatoes, roast tomatoes and green beans.

This is my favourite one www.jamieoliver.com/recipes/fish-recipes/fish-in-a-bag/ - it converted me to liking fennel

Chop up a leek and steam it. Put it on top of white fish, add a knob of butter and a little salt and pepper. Wrap it all up in foil and in 20 minutes its done.

You need to steam the leek first (just put them in a lidded Pyrex with 50ml of water and microwave for two minutes) as they cook slower than the fish.

Serve with couscous and some other green veg.
