Non-wintery meals to go in parents' freezer

I've been making DPs some meals to keep in their freezer for when they can't face cooking - so far shepherds pie and chicken 'curry'. Once it gets a bit more wintery then I can do beef casserole, steak & kidney, chicken casserole with leeks/carrots etc but they don't really seem quite right at this time of year.
Any good suggestions for things I could cook that will freeze well? Although I'm not veggie I rarely cook meat other than in the depths of winter when I want a warming casserole! Ideally quick and easy would be good!

Fish pie with sweetcorn & peas in.
Coq au vin is easy to cook & lighter than a casserole.
Can freeze cooked salmon.
Soups
Ratatouille to serve with pasta.

I'm currently in batch cooking/freezer filling mode, and as well as curries have done:

Lentil ragu (easy to just cook some spaghetti to go along with it)

Veggie lasagne

Summer vegetable tagine (fennel, courgettes, etc)

Soups freeze nicely, pick 3-4 varying types (tomato, pea, corn chowder and chicken for example).
Savoury muffins (bacon cheese)

Sorry, should have said not soup, DM isn't a fan of soup other than in winter. Just thought sausage casserole / sausage pasta sauce would be another one.

I should do lasagne - I never make it for us either because it seems like too much faff - but if I did 4 lots at once (two for each freezer) it'd feel more worthwhile.

Fish pie? You can make it "raw" ....layer frozen peas with the raw fish and boiled eggs, cover with sauce (let it go cold first though if you are not going to cook it same day) , slather on mash and freeze
When it comes to cooking all your DM needs to do is rough up the mash and put on some cheese or crumbs and bang it in the oven. Use those foil dishes or the fancy lidded pyrex you can get

Chicken Tarragon

Dijon chicken too

Also I often make a few Hunter's Chicken if I get a bargain with chicken breasts...cut them open and put in a stick of cheese, wrap them back up and then wrap the whole thing in some sort of ham/bacon/prosciutto and freeze them on a tray and then wrap.
To cook I let them defrost, then either use a jar sauce, or rake in the fridge for all the tomatoey things and make up some sort of sauce for the chicken to sit in, hot oven for about 40 mins and usually serve with cheesey mash!

Risotto also freezes surprisingly well and reheats nicely in the microwave. Couple of bits of garlic bread or salad to go with.

Kedgeree and other sorts of Biryani type things also work really well, but I know some folk are wary about reheating rice

Chicken cacciatore, a small portion with some new potatoes is lovely in the summer.

Never heard of Chicken cacciatore but that looks lovely - I've got absolutely masses of tomatoes at the moment so anything a bit different using those is good!
