Feasty veggie food for a crowd

I have 10 to feed over a couple of (probably very hot) days. Looking for simple, buffet type ideas, everyone is quite foody and open to new things.

Veggie tarts, like asparagus or tomato on puff pastry is popular when I've served it. Chef John on foodwishes.com has the recipe for a beautiful spring veggie tart. Sounds dramatic but it really is beautiful to look at, lol.

Yes to veggie tarts or quiches.

Serve with some salads like potato salad, quinoa or couscous salads as well as the more traditional green leaf, tomatoes etc.

Add some nice bread if toy think people will need filling up more

Oops I've just seen that this is over a few days.

  • A layered filo, feta. tomato and black olive tart
  • Med roast veg, hummus, halloumi
  • Frittata with salads

As an alternative to a pastry tart, topped flat breads are good, dolcelatte with fig topped with rocket a drizzle of honey and pine nuts is my fav.

I'd go for a lovely cheeseboard with lots of grapes, butter, chutney and crackers. A selection of salads, maybe a nice panzanella; fennel, orange and almond; green beans with a pistachio pesto. Also absolutely love tacos with spiced halloumi and salsa etc. All simple to make and most can be prepped in advance. Hope it goes well! ❤️

I will definitely do a cheeseboard/ploughman’s type option for one of the lunches.

Veggie tarts is a good idea too, with nice salads and new potatoes. And I might make pizzas for another night.

Really easy tart from The Green Roasting Tin:
packet of ready-rolled puff pastry - sit it on a huge baking tray, on baking paper
Spread with dijon or grain mustard, to not quite the edges
Layer over a load of sliced shallots
Shove a load of grated cheese on top and bake
Can sprinkle some thyme over before baking too

It's so good, and ridiculously easy.

You could maybe do one with mustard and shallots and one with red pesto, red onion and mozzarella? Plus some salads and bread.

On another day, maybe a big veggie chilli with tortillas, guacamole and tomato salsa plus cheese and soured cream and a green salad.

Or veggie hotdogs with coleslaw, corn on the cob etc

A mezze with dips like Nigella's red kidney bean dip, sundried tomatoes, oils and plenty of breads

Falafel and red onion chutney/mint yogurt/hummus stuffed into pitta halves

Cous cous with Mediterranean veg stirred through, or flavoured with lemon and herbs

Happily googling things like panzanella and spanakopita. Thanks everyone, this thread has been very helpful and informative. I do have a small repertoire of nice veggie recipes (chilli and curries and burritos and the like) but I have already used them a few times on this group of guests so it’s great to have some fresh ideas.

Pumpkin lasagna. Parboil chunks of pumpkin and slice a couple of millimetres thick. Using your lasagna dish or other casserole/tray type dish layer pumpkin the slices with a loose tomato ragu flavoured with a little cinnamon and nutmeg. Three layers minimum but more is better. Finish with the ragu.

Frozen sweetcorn looks good flecked through. For vegans just breadcrumbs on top and for vegetarians some good, sour Greek feta adds a salt kick on top with the breadcrumbs. Red lentils might be cooked in the sauce before layering for added bulk

This can be made ahead and freezes or keeps well in the fridge to be eaten warm or cold.
