Veggie snacks with protein?

Hi,

Trying to reduce the amount of meat we eat and go semi-veggie. We have lots of nice dinner recipes but I think now we’re not alternating them with meat days I need some easy snacks. In particular because the veggie options for lunch at/near work are low on protein and I’m getting home starving!

If you eat (veggie) cheese and ( normal ) eggs then lots of choices. Otherwise, hummus, or dips made from beans, tofu, quorn. Pot of mixed grains with a dressing. Bean salad. Felafal wrap.

Just snacks or lunches?

If you like hummus then a pot with dipping strips of pepper, carrot and cucumber is nice. You can toast whole pitta and then slice them into strips across the shorter side into strips to dip. You can also make up sarnies or wraps using hummus, salad, grated carrot etc. If you like tahini on it’s own there are loads of recipes for dressings including it.

Pasta salad with pesto and veg (pine nuts and cheese in the pesto), halloumi in salads or wraps, adding nuts and seeds like flaked almonds in couscous or pumpkin seeds with feta. Peanut butter can be added to dressings. Goat’s cheese and walnuts go well with beetroot and salad leaves. Come winter lentil soups are my go to but in the warmer weather cold green lentils work in salads.

If you like eggs Frittata are easy to do and they use up whatever bits of veg or cheese you have leftover.

I snack on nuts, keep a ziplock type bag in my bag and top it up as needed. Without this I am reaching for crisps and chocolate Hmm I’m not veggie so I don’t have much else to suggest.

Rice cakes spread with nut butter. Caramel rice cakes are made for peanut butter!
Apple slices dipped in almond or peanut butter
Yogurt - at the moment I like to add a spoon of honey and flaked almonds to a mini pot of Greek yogurt.
Munchy seeds

Thanks, going to save these! Trying to be healthier too, so chocolate / cheese needs to not be my only thing in the house that doesn’t need cooking Grin if there isn’t going to be leftover roast chicken in the house.

That said, I just had Greek yoghurt with walnuts and a bit of honey, felt quite proud then realised that’s rather more calories than a mars bar...

I’d forgotten roast chickpeas - thanks! Just stuck a tray in the oven and the spices are smelling good.

Cheers. We are a week into trying out a veggie month and I’m already finding it annoying/restrictive which I did not expect 😂 given how much veggie-er our cooking has got over past year.
