Need some quick and easy flavours for white fish

Trying to wean the kids off fish fingers and onto fish filets. What can I put on them - preferably vegan (dietary issues), or at least where I can use vitalite instead.

Soft cheese and crushed Ryvita
Pesto
Hummus
Smoked paprika and tomato
Fish en papillote is always fun for kids

They are nice just dusted in flour, fried with a wedge of lemon.

The maggi fish papers are nice and if you have a Jack Fultons nearby they are 25p!
The tomato one is lovely and I just chuck it in the sandwich toaster thing so very fast and easy!

I was coming on to say white fish cooked with black pudding and chorizo is amazing... but that's not vegan at all!!

Paprika and tomato sounds lovely, how much of each?

Vegan was probably unhelpful actually - I need dairy, raw egg, wheat and soy free Hmm

So the soft cheese and Ryvita sounds delicious but is sadly off the menu for a while! Are there any easy spices/lemon etc that will help?

I do a bit of curry paste and some coconut milk and poach fish in it for a v easy quick curry

OP,
This might work as a sort of 'transition' from fish fingers to something a bit more adventurous.
Familiar texture but better flavours etc.

Disclaimer: haven't as yet tried it myself, but friend regularly makes it for her fish-averse DCs, who polish it off happily Smile



Crunchy, tasty fish recipe: GLUTEN/WHEAT/DAIRY/EGG/SOYA-free!

4 x 4 oz white fish fillets/loins
(* USE EGG REPLACER, e.g. Orgran) 2 beaten eggs
(* USE GLUTEN-FREE) unseasoned panko bread crumbs, 3/4 cup
1/4 cup ground almonds
1/2 tsp salt
1/4 tsp fresh ground black pepper
pinch of 2 of chilli powder (optional)
1 tsp lemon zest
2 TBS olive oil, for browning

  1. Heat oven to 150 C. Position wire rack on top of baking tray. Spray with cooking spray.


  1. In a large shallow dish, combine the panko/panko replacer, ground almonds, salt, pepper, (chilli powder, if using) and lemon zest.

In another shallow dish, pour in the eggs/egg replacer.

  1. Heat a large nonstick skillet with 1 TBS olive oil.

When oil is hot enough ( beginning to see wisps form in the oil), dredge a piece of fish in the eggbeaters and then coat in the panko mixture. Place in skillet. Repeat with another piece of fish. Don't overcrowd the pan. ( I did mine in two batches ) Brown fish on each side.
BE CAREFUL...This won't take long at all!.
Transfer browned and partially cooked fish to wire rack.
Place in oven and repeat with browning remaining fish, using the other TBS of oil and transferring them to wire rack in oven.

  1. Allow to finish cooking in oven. Amount of time needed may depend on how long they stay on stove top.

Fish is ready when it is firm and flaky.
Hers took about 10 minutes or so, but was using thick loins. Garnish with lemon.

not sure where that came from...is meant to say "beaten egg/egg replacement"!

How about making your own fishcakes to help with the transition with a couple of alterations something like this could work.
Also a really easy one is to spread the top of the fillets with mango chutney before baking. They go all sticky in the oven are so quick to do.

I make cod with pesto crust, on a bed of vegetables or with Cajun spices. My children like it and they also like cod with pesto in pasta.

For the smoked paprika & tomato I make this www.bbcgoodfood.com/recipes/9647/onepan-spanish-fish-stew but leave out the prawns and sometimes the chickpeas - and rather than potatoes I sometimes serve it with pasta or couscous
