Could I roast tomatoes in a slow cooker?

I am obsessed with sundried tomatoes, but can't really afford as many as I'd like! Many recipes cook for 12+ hours in the oven, which would probably negate the financial benefits.

Do you think I could roast them in the slow cooker, and if so, how?!

I don't think it would work as the slow cooker would keep in all the moisture, so they would be slow steamed rather than roasted. You could give it a go and see how they turn out though - you can always blend them up and use for pasta sauce if they don't turn out quite right.

No. As above - you're trying to get all of the moisture out but a slow cooker would keep it in. You'd end up with tomato mush. If you put two tray loads in packed full of them and maybe did it for a few hours then turned the oven off and left them in in the residual heat you might save a few hours of cooking time. Or look out for them in B&M etc

Wouldn't work in slow cooker.

I've done sun dried tomatoes. Cut and season them, put on plate and outside in the sun with one of those net covers to keep flies off them. They were lovely1
