Can you give me your very best fish pie recipe please

I have my family coming over on Sunday to eat but my dd has a sports fixture for a few hours on Sunday morning so I need to prepare something on Saturday that I can chuck in the oven when we get in.
My aunt has type 2 diabetes so I 'think' I should avoid rich foods ( not sure if that's right or not?!) Soooooo I thought a posh fish pie might work well.
My only worry is that some of my previous attempts tasted nice but were possibly slightly watery Confused
If anyone has a fabulous fail safe, tried and tested fish pie recipe and/or tips if you could share them that would be brill.

Nigel Slater's recipe is foolproof, I think from memory he puts hard-boiled eggs in but I don't.

It's basically:

Poach smoked fish in milk, drain and reserve the milk.
Fry leeks in butter, sprinkle generously with flour.
Add the poaching milk little by little - it will be lumpy af but don't panic. Low heat, keep stirring till thick.
If you don't have enough sauce, add more ordinary milk.
Stir in a couple of dessert spoons of creme fraiche - that's what makes it creamy.
Add in the raw and smoked fish (haddock, salmon, prawns). Don't stir too much because it will break up. Big huge handful of chopped fresh parsley, season. Prob won't need to much salt.
Put in dish and top with potatoes or pastry. If using pastry, stick an upside down egg-cup in the middle of the dish first to sort of hold up the pastry lid.

Jamie Oliver's fish pie is a favourite in our house. It is much much lighter and fresher than traditional "white sauce" fish pies and is gluten free.

Thank you so much. Any ideas why mine might have gone a bit watery before? It wasn't grim, just not really perfect!

Secret is to make the sauce really thick so when the liquid comes out of the fish it doesn’t dilute it too much

Any suggestions for a good pud that would go down well after a lovely, non watery, tasty fish pie?! Again, something that can be prepared the day before would be ideal Grin thanks Smile

do not cook the fish first, it makes the house stink for days and adds to the wateryness

we like veg in our pies so I put in a layer of frozen peas or spinach, next put on the fish just cut in large chunks, boiled eggs too, and we are also keen on some nice big prawns....then a really thick sauce, then your mash.

put into the oven at about 180-200 until the top is all golden and crisp.

Omg, it’s a tiny bit of a faff but it’s blooming gorgeous. But has double cream and lots of cheese so not sure it’s entirely what you are looking for! But it is the most ‘special’ fish pie ive ever made.

I add raw prawns as well. I also throw in a few leeks.

I don’t add peas or sweetcorn to it & serve as side instead. I add a dash of white wine.

I also add slightly more mustard & cheese then it says.

We always use Mary Berry's fish pie recipes but omit the eggs as I don't think it needs them. We have two of her books, At Home and Mary Berry Cooks. The first one has Quite the Best Fish Bake and the latter has Three Fish Pie with Leeks and White Wine..both are equally good.

We love the Mary Berry fish pie too and omit the eggs. It is a bit more of a faff to make but really worth it if you're making it for guests. It's a bit less ordinary

Another vote for the Jamie Fantastic Fish Pie here.

There’s also a really nice veg-heavy one in the Innocent cookbook, ‘Hungry’ - includes leeks, spinach and peas for a Mean Green Fish Pie.

Jamie Oliver Ministry of Food one here too. I just use fish pie mix rather than prawns. Normally MN doesn't have a good word for Jamie, glad to see a bit of appreciation. His books are really accessible.

Thank you. I am leaning towards that one as the recipe seems easy to follow and it's for 6 which is how many of us there will be!
