Help! I have 9 jars of crunchy peanut butter! Recipes needed.

I like to keep a good store cupboard due to living in the middle of nowhere

But I have surpassed myself, there are 9 jars ( some maybe a tiny bit past their sell by date but all still unopened)

Help!

Peanut butter fudge seems like a good idea.
Or just get a spoon and eat it all

If you’ve got some past it’s use by, the best thing would be to put it in ice cream as it will be preserved by the freezing and the addition of the sugar.

And you can freeze dollops of the dough, bag up when frozen then cook when you want them.

I make satay sauce with peanut butter, curry paste and coconut milk. Also beetroot and courgette burgers held together with peanut butter and chickpeas.

@MagpieTree - any chance of the burger recipe please?
I had thought of satay sauce. I may just need to up the percentage of peanut butter!

Peanut butter cookies ( makes about 18)
125g soft butter
90g soft brown sugar
90g caster sugar
1 egg
125g peanut butter
Few drops vanilla extract
Pinch of salt
200g plain flour
1/2 tsp baking powder
150g choc chips or buttons
Preheat oven 180C

  1. Cream butter and sugars
  2. Beat in egg, peanut butter and vanilla
  3. In a separate bowl sift together flour baking paper and salt
  4. Add dry ingredients to creamed mixture and mix with a wooden spoon
  5. Scoop the stiff mixture onto prepared trays leaving space between the cookies, I use an ice cream scoop, but spoons will do.
  6. Bake for about 14 minutes.
  7. Leave for a few minutes before transferring to a rack to cool

African stews are all full of peanuts. Probably something Nigerian would fit the bill.

I would second a satay sauce, love it. Peanut butter spread on apple wedges is a favourite snack in our house.

1/2 cup honey
1 cup peanut butter
3cups oats or Rice Krispies

Melt honey and PB, mix in dry ingredients. Press into a tin - chill - cut into squares.

DD loves these in her packed lunch. I sometimes melt chocolate and put on top as a treat.

Anything that uses tahini can be made with peanut butter - hummus, a drizzle sauce over roast veg, baba ganouj...

Smitten Kitchen has three different recipes for cold peanut noodles, one with peanut lime chicken, one with cucumber, one with broccoli and tofu.

And this recipe - easy, very tasty. They do need to be kept in the fridge, though, because of the cocoa - it’s a bit messy. I used crunchy peanut butter and it worked fine, although I think I’d reduce the ground almonds a bit as they were a little dry.

Chocolate, date and peanut-butter truffles
Makes 22

270g fresh dates, pitted
40g almonds
95g smooth peanut butter
1 tbsp cocoa powder, plus extra for dusting

Place the dates, almonds, peanut butter and cocoa in a food processor and whizz until finely chopped and well combined. Using slightly damp hands, roll 2 tsp of the mixture into a ball and dust with the extra cocoa. Set aside on a baking tray lined with nonstick baking paper. Repeat with the remaining mixture. Store in the refrigerator in an airtight container until ready to serve.

Be careful with the ones past their date, I'm usually lax with use by dates but I once used some old peanut butter in something and it was vile, the oil had gone rancid 🤢

even easier cookies....

260g PB
200g sugar
1 egg

Mix well, roll into small balls and press onto a baking tray, bake in a med/hot oven for about 8 minutes, they really do not take long. ...they do catch at the edges though so keep an eye on the little buggers!

I have used all sorts of PB for these and all sorts of sugar, very agreeable recipe!!

YY, rancid peanut oil is something else. I once kept a tin of peanuts open on my desk for too long and made the mistake of eating one after it had been sitting there a couple of weeks. Bleurgh.

Chuck it in smoothies with milk/oats/honey/protein powder/bananas
Add it to porridge (so good)
