Chicken breasts

I bought some short dated chicken breasts yesterday, and we have two leftover. I need to freeze them today, but am trying to cook them first because there's always the risk they dry out if I freeze them raw. Any quick and easy recipes I can use in this situation?

I'd probably just roast them plain then use them for salad/sandwiches/stir fry once defrosted
