Holiday meals

I've got a few friends coming to join me at a holiday home. There's an Aldi and a Tesco about an hour's drive away. Have you any suggestions for easy but delicious meals. Don't mind whether it's slow cooked or oven but would like something a step above jacket potatoes or something on toast I'd do if alone. There will be 5 in total and no allergies or anything like that.

hunters chicken is lovely with potato wedges and can be made in the slow cooker

sloppy joes, the meat is made in the slow cooker. i serve them with salad

bacon, mushroom and leek risotto made in the slow cooker

burritos, i usually lay out all the fillings in bowls and let everyone help themselves.

Quiche and salad (inc potato salad) makes a great lunch or lighter meal

Roast chicken - either DIY or the rotisserie sort and a big bowl of pasta in tomato/pesto sauce OR dauphinois

What's the weather like? And so you have a full set on roasting pans/ saucepans or are there limitations?

www.recipetineats.com/slow-cooked-lamb-shawarma/ I made this with a rainbow cous cous and flatbreads for a crowd recently and it was amazing- two friends left with the recipe and dh has asked when I'm doing it again.

If cooking for veggies and omnivores I'd do a range of curries and rice for all to pick and choose. Cauliflower korma, chicken biryani, bhajis, pilau rice, naans etc

Or a meat chilli and five bean chilli with sour cream /salsa/ guacamole / rice/ tortillas ?

mac and cheese with added bacon
lasagne
roast chicken with jacket and saladie bits and bread
soup and crusty bread
chicken thighs,peas and bacon casserole.start with a base of celery onions garlic carrots add ur chicken thighs and bacon. in oil and butter. coat a bit with cornflour. add stock and a bit of white wine.soften down. add creme fraiche at the end and peas.
fajitas.
enchiladas.
pesto pasta
beef stew and dumplings.
pastry pizza slices

carbonara - a bit of luxury but cooks in 10 mins. Nice bit of salad on the side. Bought brownies, strawberries and posh icecream for pudding, or ben & jerry's with Baileys poured over.

kateandme's chicken thigh recipe is very similar to the Nigella spring chicken one. It's fab, I think it uses cider instead of wine and you can stir in lettuce at the end, which sounds weird but works amazingly well. It is really lovely and one of my go-to entertaining recipes.

We had campfire stew tonight. Done in the slow cooker. Very filling. Would be lovely with some crusty bread

Thank you all for your suggestions, they sound wonderful. @raindeermania, I'll be in Ireland in June so weather will range from very wet to slightly wet, if we're lucky it may only be damp! Fully functioning kitchen though and the drinks cabinet will be well stocked. The chicken thigh recipes sound great. I'll have people staying for three days so the more suggestions the merrier.
