individual cold dessert

Need help with inspiration, ladies! I usually enter several classes at our local agricultural show each June, things like brownies, muffins, scones.

One of the classes this year is an "individual cold dessert". They have run this class before and it's usually something served in a glass dish of some description. Really struggling to think of anything to make. It needs to be something really tasty, but which will still look OK after being sitting in a tent all afternoon. So not something like a fool or a syllabub which will dissolve into a puddle.

Rice pudding could be a good one - was thinking chocolate mousse but it can easily go wrong and I don't want to be tearing my hair out when it won't set.

Individual wine jellies, perhaps with fruit in, halved grapes for instance. Maybe decorate with some thing interesting, a hibiscus flower or crystallised rose petals. (Or strawberry and rose jelly would be good too!)

If you do the rice pudding, decorate it with edible gold leaf.
