Carrots...any bright ideas?

Got a whole bag of organic carrots that are about to go mouldy- want to do some finger food (not boring carrot sticks ). Was thinking maybe of like carrot fritters - like carrot rosti sort of thing but wouldn't know how to make them, dont' know how to make the potato variety either!

any suggestions, or can you think of anything better to do with a carrot? (that doesn't involve inserting it into an orifice? )

It's not finger food as such but i bake mine in a tin foil bag with lots of thyme and a slug of olive oil they taste yummy!

oooh that's a nice idea! WE are trying to get more calories into dd so a bit of extra olive oil would work, thanks!

Or you could do boring carrott sticks but jazz em up with some tasty dips???

I love the carrot recipes, thank you - will definitely try that carrot cake! But was sort of looking for baby finger food suggestions? (mind you she'd adore that cake!! )

roast them with honey so they're sticky and yummy.

Okay, tried to make carrot fritters after all - very suprisingly, dd likes them!

Finely grated carrot, cooked for 45 secs in microwave to soften. Then mixed in a beaten egg, black pepper and flour until they start to stick together. Made into little patties and fried on each side.

V pleased with self considering (a) no recipe and (b) crap cook
