Big family veggie meal ideas

I'm after ideas for veggie meals that can feed a large family preferably things I can cook in advance and bung in the oven at teatime.
My current go-to meals are: roast veg pasta bake & lasagne, macaroni cheese, tortillas & omelettes, soups, pizza, quorn & lentil shepherds pie/chilli/bolognese.

Any new ideas as we're all getting a bit bored of these and want to try something new. Youngest dc isn't keen on beans Hmm

Fajitas, stroganoff, moussaka all made with Quorn or tofu
Risotto, spinach & ricotta cannelloni
Bean or lentil burgers with chips
Thai green curry with tofu
Sausage & mash (or toad in the hole) - I really like the Heck or Linda McCartney ones

Quorn curry surely? Gets better as the week goes on. Nigella Lawson has an amazing curry in her Feast book that works brill with quorn pieces.

Just make the sauce. Drop in the quorn. On the day roast some veggies (broccoli, cauli, sweet potato, sprouts,mushrooms) heat curry eat with veggies and rice. Bloody bloody amazing

I make a chunky minestrone with white beans but no bacon, grate some cheese on top and serve with thick cut granary bread.
It freezes well too.

I'd also be giving in to Linda McCartney pies with mash and gravy. Make lazy mash. Bake some potatoes until just done in the microwave then shove in the oven while the pies cook. Scoop out the innards. Instant mash.

Homity pie.
Dahl and rice.
Thai green veggie curry.
Quinoa and harissa roasted veg

Par boil cubes of potatoes. Put in a dish with sliced onions. Season. Sprinkle with a tablespoon of plain flour. Arrange sliced tomatoes on top and put another thin layer of flour on top. Cover with lots of grated cheese (red Leicester works particularly well). Add milk to half way up the potatoes and put generous knobs of butter on the top. Bake.

Winter veg puff pastry tart
Mudajara with grilled halloumi
Cheese and potato pie
Mushroom and lentil hotpot
Moroccan tagine with carrots, aubergine and chickpeas
Quiche
Filo pastry pie - spinach and feta is traditional but you can stick in lots of different fillings depending on what you've got to hand.

Big quiche with salad and bread, or with little garlic roasted potatoes and salad

Mash a load of potato and sauté some leeks. Mix together with a shedload of cheese, more cheese on top and cook until golden. To be eaten with peas and HP sauce!

Stir fries or Thai curries with rice or noodles

Soup with bread and cheese, or black bean soup with nachos

Am currently obsessed with James Wong's book 10 a Day The Easy Way

It's almost entirely a veggie book, or easy to make so and full of ideas.

We had his rainbow tartiflette tonight which to be honest bore v little resemblence to tartiflette and was yummy. Masses and masses of veg, cheese and I don't think missing out the bacon, which was a tiny amount would have made the slightest difference.

Have also made his mac and cheese which also mysteriously packs in a vast quantity of veg. So far, everything is a winner.

Excellent caviar plan there. Why not have a few oysters on the side?

Anyway. My lot like a load of vegetables layered in with cheese sauce and covered in mash. Whatever vegetables you like is probably the best guide. Bit of grated cheese on top and there you go, ready to bake. Serve with a few peas or something similarly effort-free.
